Cornmeal Muffins
INGREDIENTS
1-cup self-rising flour
1-cup stone ground yellow cornmeal
2-tablespoons sugar
2-tablespoons melted shortening or lard
1-egg, slightly beaten
1-1/2 cups sweet milk
PREPARATION:
Pre-heat oven to 425-degrees farenheit.
Mix together dry ingredients. Add milk, egg and melted shortenig and mix well.
Pour into prepared oven tin and bake until golden brown, about 17-18 minutes.
Serve while hot with melted butter.
