Now here’s a bit of a treat that I learned while living
south of San Antonio. I make this quite often for myself as a treat. [I can eat
these for a meal actually!] DH likes them as well. Think “stuffed tortilla” and
you’ll get the idea!
Ingredients:
2
cups of corn masa harina
1
cup water
1
cup shredded cheese mix
(frying
cheese, mozzarella, ricotta)
Cooking Instructions:
Mix
corn masa harina and water
together
in a mixing bowl until
smooth.
Knead well. Cover bowl
and
let dough rest for 10 minutes.
Shape
dough into eight 2-inch
diameter
balls. On a lightly floured surface, roll each
back
into 6-inch flat rounds. Each round should be
about
1/8th of an inch thick.
Sprinkle
¼ cup of cheese over each round. Place a second
round
over the cheese and pinch the edges together to
seal
the cheese in.
Heat
in a slightly greased skillet over medium high heat.
Cook
one round at a time, about 2 minutes on each side
or until
lightly browned.
Notes:
Can be stuffed with a combination of cheese, refried beans,
fried pork
rind or chicken.
